Pickling pot culture is one of the characteristics of the traditional eatery culture, and the vats and urns are the indispensable vessels in this culture. These vessels have been a constant companion to the Taiwanese all the way up to the 50s and 60s, and could be regarded as the mainstay that enable the economic development that Taiwan has been blessed with in recent decades. Although their importance has been somewhat replaced by other materials and items as time has gone on, their sturdiness and simplicity has similarly truned into something of a symbol of traditional Taiwan.
